If you haven’t jumped on the avocado toast train yet, you may be living under a rock – and I don’t mean the Sudbury basin.
The little pitted phenomenon known as the avocado is not new to most kitchens, especially when it comes to guac on taco Tuesday’s, and there’s good reason to keep your house stocked with them. Avocado’s are jam packed with good stuff like vitamin b, c and e; contain more potassium than a banana; and include fibre and the “good” monounsaturated fat. Because of their thick outer peel, avocados also rank low in pesticide residue (compared to other fruit and vegetables).
So naturally, this food deserves to be eaten more often – and not just with corn chips.
Avocado + bread may be one of the most simple yet satisfying combinations that can work as pretty well any meal. Throw it on toast and call it your breakfast; smush it between two pieces of sliced bread to make yourself a scrumptious lunchtime sandwich; or dice it on toast points and make a fancy dinner time bruschetta.
In my case, avocado in the morning helps give my house a solid start to the day. And the easiest, fastest and honest-to-goodness yummiest way for us to get that serving is by putting our avocado on toast.
Since I do not have a sweet-tooth, I often shy away from most breakfast foods, which is why I fell in love with salty, savoury and spicy avocado toast mixtures. But my husband and boys are quite the opposite and would literally eat pancakes for all meals if they could. This meant that I had to be a bit creative with our avocado breakfasts in order to satisfy everyone’s palate.
Knowing how busy mornings can be, I decided to share my tried-and-true avocado toast concoctions. Here are the top three go-to avocado toast recipes from my kitchen. Each one only has three ingredients and can be whipped up in about three minutes. They’ve also been tested out on picky kids and adventurous adults, all with raving reviews.
Whether you are headed to school, work, exercise or extra-curricular’s, you can feel pretty confident knowing that breakfast will be a home run.
Here are my sweet, spicy and savoury avocado toast recipes – three ways, three ingredients, three minutes:
1. Sweet
Ingredients: 1 banana, ⅛ tsp cinnamon, 1 avocado, (optional: 1 tsp raw honey). 2 slices of bread, toasted.
Instructions: mash up a banana and avocado together, spoon over toast and add a dusting of cinnamon (optional: add a drizzle of honey).
*In our house, we call this ‘Hulk Smash Toast’ for my boys who are totally into superheroes lately!*
2. Spicy *naturally, not for kids*
Ingredients: 1/2 tsp Huy Fong chilli garlic hot sauce, ¼ tsp lemon juice, 1 avocado (optional: sesame seeds/black pepper). 2 slices of bread, toasted.
Instructions: mash up an avocado, stir in hot sauce and top with a squeeze of lemon juice. Spoon over toast (optional: add sesame seeds and/or cracked pepper overtop)
3. Savoury
Ingredients:
1 tbsp crumbled feta cheese, 1 tsp balsamic glaze, 1 avocado (optional: dried oregano/Himalayan sea salt ). 2 slices of bread, toasted.
Instructions: mash up an avocado, gently fold in feta and top with balsamic glaze (optional: add a sprinkle of dried oregano and/or sea salt)
These avocado toast recipes are satisfying and filling on their own, but feel free to add an egg or some fruit to the mix to really up the ante on your morning meal.
